Easy Chili-Lime Chicken Marinade

Anyone else having a relaxing summer? So relaxing, in fact, that you’ve lost sight of your healthy eating goals? Me too! But now, after overindulging during our annual summer trip to the cabin, I’m getting back on track… at least until our next vacation. This week, I made an extremely easy chili-lime chicken marinade to add some summer kick to chicken kebabs and tacos.

Make this! You probably have everything you need in your pantry already.

Adapted from a recipe I found on All Recipes

For each pound of chicken:

  • 3 tablespoons olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Cayenne pepper to taste
  • Salt and freshly ground black pepper to taste
  • Possible add-ins that I haven’t tried: fish sauce (instead of salt), cilantro


  • Whisk ingredients together. (See? Easy!)
  • Pour mixture over chicken and let marinate for at least 1 hour. (For kebabs, I cut the chicken into cubes and let it marinate overnight before threading onto skewers and grilling. For tacos, I cook the chicken in a slow cooker on low for about 6 hours and then shred it.)
