What happens when you hit a patch of stress during a Whole30? If you’re me, you stick with the program, but neglect your Whole30 food journal. Not a bad compromise, really.
I’m now on day 22 of the program and feeling great. In fact, the veggies+protein+fat+fruit routine feels much more familiar to me now than it did when I completed my first Whole30 a year ago. Am I looking forward to my celebratory glass of wine? Of course. But for now, my treat of choice must be…
Caramelized Brussels Sprouts With Fish Sauce
I realize that this sounds like food that you would use to torture a child, but these are so very good. And easy! In fact, this isn’t really a recipe at all.
Step 1: Clean your brussels sprouts and cut them in half. (Easy.)
Step 2: Blurp some fish sauce onto your brussels sprouts. There is no need to measure. Just provide a light coating on your sprouts with a few shakes of the wrist and a gentle toss with a spoon. (Easy.)
Step 3: Heat up a fat of your choice (I like clarified butter) in a pan on medium heat. Put your brussels sprouts in the pan, cut side down, and let them sizzle until they’re golden brown. (Easy.)
Step 4: Flip the brussels sprouts as they brown so that they cook on the other side. (Tedious, but easy.)
Step 5: Toss them around a little in the pan and then put them on your plate. (Easy.)
Enjoy! (SO easy.)
